For the dough:

  • 6 dl | 3 cup flour
  • 6 tbsp sugar
  • 1/2 dl | 1/4 cup cocoa powder ( I believe I added more then that to make it a dark brown color)
  • 188 g cold butter in cubes
  • 1 egg yolk
  • 2-3 tbsp ice cold water

For the chocolate frosting:

  • 70 g chopped chocolate
  • 60 g warm/ boiling heavy cream

For the pink frosting:

  • 70 g white chocolate
  • 60 g heavy cream
  • pink gel food coloring

Optional glaze for them to shine:

  • 70g sugar
  • 60 g water

Directions

  1. Make the Dough:
    Combine the flour, sugar, and butter in a bowl. Mix until the butter is evenly distributed, creating a flaky texture.
    Add the egg yolk and ice-cold water, 1 tbsp at a time, until a dough begins to form.
    Divide the dough into two equal portions. Wrap one portion in plastic wrap and refrigerate for 1-2 hours.
    In the second portion, knead in the cocoa powder until fully incorporated. Wrap this portion in plastic wrap and refrigerate for 1-2 hours.
  2. Prepare the Dough for Baking:
    After chilling, take 1/4 of the chocolate dough and knead it into the plain dough for a marbled effect.
    Roll out both doughs (keep them thin for better results) and cut out your desired cookie shapes.
    Place the shapes on parchment-lined baking sheets.
    Bake at 165°C (330°F) for 10-12 minutes. Let the cookies cool completely on a wire rack.
  3. Prepare the Chocolate Frosting:
    Place the chopped chocolate in a bowl. Pour the boiling cream over it and stir until smooth.
    Refrigerate for 30 minutes, then whip the mixture with an electric mixer until fluffy.
  4. Prepare the Pink Frosting:
    Place the white chocolate in a bowl. Pour the boiling cream over it and stir until smooth.
    Add a small amount of pink gel food coloring and mix well.
    Refrigerate for 30 minutes, then whip with an electric mixer until fluffy.
  5. Optional Glaze for Shine:
    In a small saucepan, combine sugar and water. Bring to a boil and simmer until the mixture thickens slightly.
    Brush the glaze over the cookies before frosting.
  6. Assemble the Cookies:
    Frost each cookie with the chocolate frosting, pink frosting, or a combination of both.
    Place a second cookie on top if making sandwich cookies, or leave them as single frosted cookies.
  7. Serve and Enjoy:
