Crumble Topping

* 3 tbsp melted butter
* 5 tbsp flour
* 2 tbsp brown sugar
* 1 tbsp sugar
* Pinch of salt

Mix together with a fork until crumbly. Set aside.

Cookies

Ingredients

* 140 g butter, room temp | 2/3 cup
* 3/4 cup | 2 dl brown sugar
* 1/2 cup | 1 dl sugar
* 1 egg
* 1 tsp vanilla
* 3 3/4 cups | 4.5 dl flour
* 1/2 tsp salt
* 1 tsp baking soda
* white chocolate
* strawberries + raspberries

Cream Cheese Filling

* 200 g cream cheese
* 2 tbsp powdered sugar
* 1 tsp vanilla

Mix until smooth.

Instructions

1. Preheat oven to 175°C (350°F) and line a tray with parchment paper.
2. Beat butter and sugars until light and fluffy. Mix in egg and vanilla.
3. Add flour, salt, and bicarbonate soda. Mix until combined. Fold in white chocolate and berries.
4. Scoop cookie dough onto the tray. Add a small spoon of cream cheese filling in the middle and cover with a little extra dough.
5. Top with crumble topping.
6. Bake for 12–15 minutes until golden around the edges but still soft in the center. Cool for 5 minutes before moving to a rack.

Crispy Roast Potatoes with Herby Sauce

Ingredients

* 1 kg starchy potatoes, peeled and cut into chunks
* Vegetable oil, duck fat, or ghee
* 3 garlic cloves, minced
* Rosemary, finely chopped
* Flaky salt

Herby Sauce

* Sour cream
* Mayo
* Dill
* Green onion
* Parsley
* Lime juice
* Salt & pepper

Method

1. Preheat oven to 200°C / 390°F.
2. Boil potatoes in salted water for about 15 minutes, until fork tender. Drain well.
3. Put the potatoes back in the pot, cover with a lid, and shake gently to rough up the edges, this makes them extra crispy. Let them steam dry for 10–15 minutes.
4. Add enough oil or fat to cover the bottom of a baking tray. Heat in the oven for 15 minutes.
5. Carefully add the potatoes to the hot tray and toss to coat. Roast for 1–1½ hours, turning every 20–30 minutes until golden and crispy.
6. In the last 30 minutes, add garlic and rosemary. Toss well and finish roasting.
7. Mix all sauce ingredients in a bowl.
8. Serve the potatoes with the herby sauce and finish with flaky salt and devour!

Alltså sommarens kanske godaste dessert hörniii!!!

Här kommer receptet håll hårt i det: 

350 g jordgubbspuré
330 g Rekorderlig jordgubb/lime alkoholfri cider 
160 g sockerlag
25–30 g limejuice
10–15 g glykossirap (valfritt)

Sockerlag

100 g socker
100 g vatten

Värm tills sockret löst sig. Koka inte. Låt svalna.

Gör så här

Blanda puré, lime, citron, sockerlag och ev. glykos.
Rör ner cidern.
Frys i glassmaskin eller i form i frysen.
Utan glassmaskin: rör om var 30–45 min första 2–3 timmarna.

Crispy Bang Bang Shrimp Tacos🥑🍤🥭

Jalapeño, Coriander & Lime Sauce
* 1 large handful coriander
* Juice of ½ lime
* ½ fresh jalapeño
* Salt & pepper
* 2 heaping spoons of sour cream 

Blend everything until smooth. Set aside.

Bang Bang Shrimp

* 300 g peeled, cleaned shrimp
* 100 ml buttermilk (milk + 1 tbsp apple cider vinegar) 
* 2 tbsp cornstarch
* 4 tbsp all-purpose flour
* 2 tsp salt
* 1 tsp paprika

For Breading

* Panko breadcrumbs
* 1–2 eggs, beaten
* Cornstarch
* Oil (for frying)

Bang Bang Sauce

* 2 tbsp sweet chili sauce
* 1 tbsp Kewpie mayo
* 1 tbsp sriracha

**Mix everything together.

For Assembling

* Corn tortillas
* Shredded purple cabbage
* Mango (sliced or diced)
* Avocado
* Jalapeño
* Fresh coriander
* Lime wedges

Instructions

1. Make the sauce
  Blend all the ingredients for the jalapeño-coriander sauce. Set aside.
1. Prepare the shrimp
  Mix buttermilk, cornstarch, flour, salt, and paprika in a bowl.
 Add the shrimp and let them soak for a few minutes.
1. Bread the shrimp
  Dip each shrimp in cornstarch, then egg, then coat in panko.
1. Fry
  Heat oil and fry the shrimp until golden and crispy.
 Let them drain on paper towels.
1. Toss in sauce
  Lightly coat the shrimp in the bang bang sauce.
1. Assemble tacos
  Warm tortillas, the green sauce, add cabbage, shrimp, mango, avocado, jalapeño, and coriander.
 Squeeze over lime and devour!

Fluffy, filled with a buttery almond filling it’s the only thing you need

Cardamom Rolls

Dough
50 g fresh yeast or 17 g dry yeast
500 ml milk
200 g sugar
12 g cardamom
800 g flour
200 g butter (soft)
1 tsp salt

Filling
225 g butter (soft)
100 g almond paste
200 g sugar
120 ml light syrup
1.5 tsp cornstarch
3 g cardamom

Topping
1 egg + pinch salt + splash water
~200 ml cardamom sugar

Syrup
150 g sugar
140 ml water

Method
Dissolve yeast in milk (~25°C). Add sugar, cardamom & flour. Mix 5 min. Add butter gradually, then salt. Knead 10 min until smooth. Rest 20–30 min.

Mix filling until creamy. Roll dough into a rectangle, spread filling, fold & roll lightly. Cut strips, twist into buns.

Proof 1.5–2.5 h until doubled. Bake at 200°C for 10–15 min.

Brush with syrup, coat in cardamom sugar. Let cool & devour!

I keep this dough in my freezer at all times. for emergencies only (and so should you 🫵🏼)

Brown Butter Chocolate Chip Cookies + Cookie sundaes 

Ingredients
	•	220 g butter
	•	1 ice cube
	•	2 tbsp nonfat dry milk powder
	•	2/3 cup sugar
	•	3/4 cup light brown sugar
	•	1 egg + 1 egg yolk (room temp)
	•	2 tsp vanilla
	•	2 1/4 cups (280 g) flour
	•	1 tsp baking soda
	•	1 tsp salt
	•	100 g chopped chocolate
	•	130 g chocolate chips
	•	Flaky salt (optional)

1. Brown the Butter
	•	Melt butter in a saucepan over medium heat.
	•	Stir until it foams and smells nutty (golden brown).
	•	Remove from heat immediately.
	•	Stir in milk powder + ice cube (until melted).
	•	Let cool until warm, not hot.

2. Make the Dough
	•	Beat cooled butter until light and fluffy (3–5 min).
	•	Add both sugars → mix until smooth.
	•	Add egg, yolk, and vanilla → mix well.
	•	In another bowl, mix flour, baking soda, salt.
	•	Add dry ingredients to wet → mix just until combined.
	•	Fold in chocolate.

3. Chill
	•	Scoop dough into balls (golf ball size).
	•	Chill at least 3 hours (overnight is best).

4. Bake
	•	Preheat oven to 175°C (350°F).
	•	Place dough balls on lined tray.
	•	Bake 10–12 min (edges set, centers soft).
	•	Cool 10 min, then transfer to rack.
	•	Sprinkle flaky salt if you like.

Cookie Sundaes 
	•	Top a warm cookie with a scoop of ice cream
	•	I used homemade strawberry cheesecake ice cream (recipe on my website)
	•	And topped with homemade Carmel recipe is also found on my website. Devour!!!

For me, Easter dessert is usually carrot cake (aka the best cake). BUT if you’re too lazy to bake a whole cake… then save this and make these for Easter instead!!!

Here’s the recipe, hold on tight:

Ingredients
1 pack Biscoff cookies
1 heaping tbsp Biscoff spread
1 heaping tbsp cream cheese
200 g white chocolate
Blue gel food coloring

Optional:
Cocoa powder + a little water (for the speckles)

Instructions
	1.	Crush the Biscoff cookies into fine crumbs.
	2.	Mix with the Biscoff spread and cream cheese until it forms a dough.
	3.	Shape into small eggs.
	4.	Freeze for about 1 hour.
	5.	Melt the white chocolate and mix in a little blue food coloring.
	6.	Dip the eggs in the chocolate and let them set.
	7.	(Optional) Mix cocoa powder with a little water and use a brush to splatter speckles for a “quail egg” look.
	8.	Eat them all!!!

Brown Butter Toffee Stroopwafel Cookies 
Makes: 12 medium cookies �Chill: 6 hrs (best texture)

Cookie Dough
* ½ cup (113 g) butter, browned + cooled
* ½ cup packed (100 g) brown sugar
* ¼ cup (50 g) white sugar
* 1 egg
* 1 tsp vanilla
* 1 cup (125 g) flour
* ½ tsp baking soda
* ¼ tsp salt
* Pinch cinnamon (optional)

Mix-ins
* 1 cup (170 g) chocolate chips/chunks
* ¾ cup (90–120 g) chopped stroopwafels
* ½ cup (80–100 g) toffee pieces (recipe below)

Toffee (quick)
* ½ cup (100 g) sugar
* ½ cup (113 g) butter
* 1 tbsp water
* Pinch salt

Steps
1) Toffee: Cook sugar + butter + water + salt on medium until deep golden (hard crack, ~150°C/300°F). Pour on parchment, cool, crack, chop.
2) Brown butter: Melt butter, cook until nutty golden. Cool 15–20 min.
3) Dough: Mix sugars + browned butter. Whisk in egg + vanilla. Fold in flour + baking soda + salt (and cinnamon). Stir in chocolate + stroopwafel + toffee.
4) Chill: at least 4 hrs (or overnight).
5) Bake: 175°C / 350°F for 10–12 min. Edges golden, center soft. Cool 5 min on tray.
