Strawberry cream cake is the only right answer! Do I regret not leaving the cake with one strawberry YES! Is cake better as ; strawberries with cake rather then cake with strawberries YES!

For the cake:

  • 6 egg whites
  • 6 egg yolks
  • 180g sugar
  • 180g cake flour
  • 44g corn oil
  • 60g milk
  • 1 tablespoon vanilla extract

To assemble

  • 5 dl | 2 1/2 cups heavy cream
  • 1/2 tsp cardamom
  • 1 tsp vanilla
  • simple syrup for the cake layers ( 1:1 ratio water and sugar, boil and let cool completely)
  • Lots of strawberries

Directions

  1. Beat the egg whites and sugar until stiff peaks. Add the the remaining ingredients and beat on low until all combined.
  2. Pour the batter in a 16 cm in diameter pan.
  3. Bake on 150 c for 1 – 1,20 h.
  4. Take out let cool, cut even cake layers. Trim the edges of the cake if you want it really moist and soft.
  5. Assemble the cake by layering cake simple syrup, cream and strawberries.
  6. Top with a bunch of strawberries!
