For the spicy tuna:

  • 1 tin tuna in olive oil, drained
  • 1 tbsp vegan mayo (or regular, if you prefer)
  • 1 tbsp soy sauce
  • 1 tbsp sweet chili sauce
  • 1 tsp sriracha (adjust to taste)
  • ½ small red onion, finely chopped
  • ½ tsp Dijon mustard
  • 1 tbsp cream cheese
  • A few chopped pickled jalapeños (to taste)
  • A small handful of fresh dill, finely chopped
  • Salt and freshly cracked black pepper, to taste

To assemble the sandwich:

  • Grilled or toasted focaccia
  • Cheddar cheese
  • Lettuce
  • Sliced tomato
  • Extra jalapeños (optional)

Directions

  1. Make the tuna salad:
    In a bowl, mix together the tuna, mayo, soy sauce, sweet chili sauce, sriracha, mustard, and cream cheese until smooth.
    Fold in the red onion, jalapeños, and fresh dill. Season with salt and black pepper to taste.
  2. Build the sandwich:
    Start with a base of grilled or toasted focaccia.
    Add a generous layer of the spicy tuna salad.
    Top with slices of cheddar cheese.
    Add lettuce, tomato, and extra jalapeños if you’re brave.
    Close with the second piece of focaccia.
  3. Optional: Grill or press the whole sandwich until the cheese melts and the focaccia is golden and crisp.
