Ingredients

  • 2 cups warm water 
  • 7,5 dL | 3 3/4 cup all purpose flour 
  • 1 tbsp instant yeast 
  • 1 tbsp olive oil 
  • 1 tsp table salt 
  • 1 tbsp agave/ honey/ sugar 

Toppings:

  • Flaky salt
  • Rosemary
    ~ feta cheese
    ~ cress
    ~ chives
    ~ red onions
    ~ green pepper
    ~ black seeds

Directions

  1. Start by combining the yeast, water and sweetener.
  2. Set aside to bloom for 10 min.
  3. Add the rest of your ingredients and combine with a wooden spoon until slightly sticky.
  4. Transfer to an oiled bowl and cover with plastic wrap, place with bowl in the fridge over night OR let it proof in room temperature for 2,5-5 hours.
  5. In the morning place the proofed dough on a olive oiled pan.
  6. Let it rest with plastic wrap once again for 1 h.
  7. Fold the focaccia every 15 min. After the last proofing I’ll see that bubbles have formed on the top of the dough.
  8. Now you drizzle a good amount of olive oil on the dough and start poking the dough avoiding the pretty bubbles. Now add all the toppings you want and pop in the oven on 220 c or 430 f.
  9. Bake for 30-40 min until golden and fluffy. EAT WARM AND ENJOY!
