When I say this tastes EXACTLY like Ben & Jerry’s strawberry cheesecake ice cream, I mean I could honestly start selling pints straight out of my freezer 😌 A cream cheese ice cream base, strawberry compote, crushed digestives AND pie crumbs (!!). You get why you have to make this, right? No excuses.

I hate to be that person posting autumn content in the middle of summer, but honestly the weather isn’t really giving me much of a choice right now, and I’ve been rewatching Vampire Diaries so I’m already mentally in October 🍂

I think autumn might actually be my favorite baking season. I get to be extra creative with desserts, and these pumpkin shaped cream cheese buns are definitely one of those!!

I also came up with the Swedish name hallonpajsbullar, and honestly, I like it wayyy more. It just describes them perfectly.

So, we’ve done the whole “what I’d serve you if you came to my bakery” thing but now it’s time to show you what I’d bake if you walked into my kitchen today. These raspberry brioche crumble buns are super, super soft and fluffy, with a vanilla custard center, raspberry compote, and the perfect golden crumble on top.

This one is a Cinnamon roll Blueberry swirl ice cream, with a cinnamon roll cookie dough rolled in pearl sugar, layered into a cinnamon-infused vanilla ice cream base (literally the best base recipe I’ve ever made). Layered with a super fresh blueberry compote that ties it all together 🫐🍨
