Ingredients

  • 50 g soft butter
  • 0.75 dl (5 tbsp) granulated sugar
  • zest of one orange
  • zest of one lemon
  • 1 tsp cardamom
  • 1 egg
  • 2.5 dl (about 1 cup) all-purpose flour
  • 0.5 tsp baking powder
  • 0.75 dl (about 1/3 cup) slightly chopped almonds

Directions

  1. Preheat the oven to 200°C (390°F).
  2. Cream together the butter and sugar in a mixing bowl. Add the egg and mix until smooth.
  3. In a separate bowl, mix the flour and baking powder.
  4. Roughly chop the almonds. Add them and the flour mixture to the butter mixture. Mix until a dough forms.
  5. On a parchment paper, form the dough into a log about 15 cm (6 inches) long. Place on a baking sheet lined with parchment paper.
  6. Bake in the middle of the oven for about 15 minutes. Let cool slightly.
  7. Lower the oven temperature to 100°C (210°F).
  8. Slice each log diagonally into about 12 pieces. Place them back on the baking sheet, cut side up.
  9. Dry in the oven for about 1.5 hours, flipping halfway through. Leave the oven door open now and then to let moisture escape.
